Culinary
Culinary 1: Foods and Nutrition
Credits: 10 credits total (5 credits per quarter)
Grades 9 - 12
Meets UC/CSU Requirements: Area "G" and CTE
This course is a Level I Culinary class within the Food Science, Food Service and Hospitality Career Pathway. Students will master classic preparation techniques for a variety of dishes, while learning the importance of making educated decisions regarding nutrition. First semester course content includes: career readiness, food safety and sanitation, kitchen equipment, knife skills, recipe reading, and food science/nutrition. Second semester includes: dietary guidelines, meal planning, grocery budgeting, baking basics, and U.S. and world food supply and exploration. Concepts culminate in weekly cooking labs during which students prepare a variety of balanced meals including healthy proteins, whole grains, healthy oils, vegetables, and fruits.
Culinary 2: Food Service and Hospitality
Credits: 10 credits total (5 credits per quarter)

This course is a Level II Culinary class within the Food Science, Food Service and Hospitality Career Pathway. Course content is guided by hospitality industry standards as well as more advanced culinary concepts and techniques pertaining to the front and the back of the house – a high level of professionalism is expected. Emphasized food preparation concepts include: safety and sanitation, dry vs. moist cooking techniques, seasonings and flavorings, stocks, sauces, soups and appetizers, desserts, proteins, and vegetables. Service concepts include: proper dining etiquette and table service and culminate in hands-on catering experiences and formal dining service for a variety of school events. This class will prepare students to work in the foodservice industry as well as many other customer service related job fields. Concepts culminate in weekly cooking labs during which students prepare a variety of dishes. Students will earn Skyline college credit through Dual Enrollment Course - Restaurant and Banquet Operations. Students will leave this second year pathway course with a professional resume portfolio.

Dance
Dance 1: Composition - College Prep
Credits: 10 credits total (5 credits per quarter)

Dual Enrollment with Skyline College
This is an introductory dance (Performing Arts/CTE) course for students who have little to no background or training in dance. Students can develop an awareness of correct body alignment, increase physical coordination and flexibility, balance and agility when performing simple to complex movement phrases. Students can develop a refined appreciation for different dance forms and their history including ballet, jazz, theater dance, modern, hip hop, recreational dance workout, West African, Afro Cuban and Brazilian dance, and Salsa. This course will explore various life and career skills necessary, including developing music and video editing skills, and promotes creative thought and critical thinking. This course is part of the Arts, Media, and Entertainment Pathway for Performing Arts.
Dance 2: Production - College Prep

This is an intermediate level Performing Arts (CTE) course designed as a continuation of dance education that will allow students a deeper understanding of dance, along with developing intermediate to advanced technical accuracy, performance experience, choreographic prowess, and career skills. Students can refine their appreciation for ballet, jazz, theater dance, modern, hip hop, recreational dance workout, West African, Afro Cuban and Brazilian dance, and Salsa. This course will explore various life and career skills necessary, including developing music and video editing skills, and promotes creative thought and critical thinking. This course is part of the Arts, Media, and Entertainment Pathway for Performing Arts.

Digital Art 1 - College Prep

Digital Art 1 is a course that explores the role and influence of new technologies on the basic concepts, principles, and elements of contemporary digital media. Students understand the key technological skills required to design, edit, and produce artwork for electronic and printed presentation. Students explore digital art across various industry sectors and content areas through hands-on project based assignments that nurture talents and skills. This class focuses on photo manipulation and graphic design.

ENGINEERING TECHNOLOGY 1a: Engineering Design CP (Level 1)

The Engineering Design class explores how engineering technology is used to solve manufacturing design problems, allowing for the production of precise, repeatable products that meet clients' specifications. Computer-aided design is used to control manufacturing equipment and communicate design ideas with clients and engineers. Students will design and manufacture products using laser cutters, 3D printers, vinyl cutters, and CNC milling machines. Additionally, students will learn how engineers use computer programming to control mechanical machines, such as robots, and other manufacturing and industrial equipment.

In the Engineering Sustainability class, students explore options and design solutions to support our society's transition toward sustainable energy resources. Students will evaluate the benefits and costs of using electricity to power our society, including for electric cars, trucks, and scooters; home heating and cooling; and power. Students will be encouraged to engage in implementing proven solutions to community problems. Laboratory work will support students in testing, observation, analysis, prediction, and problem-solving.

The Engineering Electronics course is the capstone class for the Engineering Technology pathway. Students will explore the fundamentals of electronics, including circuit modeling in software, breadboard prototyping, and soldering components onto printed circuit boards.
Health Science
Gateway to Health Careers

Introduction of skills, attributes and basic knowledge required for entry into various health care professions. Includes basic assessment, CPR, and math calculations used in health care. Emphasis on providing a foundation for future health career classes.
